Value of Sales a Record High for All Mushrooms, for Fresh Use Agaricus and for Specialty Mushrooms The value of the 1996-97 mushroom crop in the U.S. is a record large $766 million, slightly above the previous record high of $760 million set in 1994-95. Growers received a record 97.3 cents per pound for the 1996-97 crop, up slightly from last season's record of 96.3 cents per pound. Volume of sales during the 1996-97 season, at 787 million pounds, failed to reach 1994-95's 791 million pounds, but the higher price more than offset the lower sales volume. The number of mushroom growers declined to 337 from last season's figure of 357. The value of Agaricus mushrooms for fresh market use continued to rise, reaching a record $606 million, 3 percent above the 1995-96 season. The value of sales of Agaricus mushrooms for processing fell 11 percent to the lowest level since the 1988-89 season. The value of sales of specialty mushrooms continued to increase, reaching $35.5 million for the 1996-97 season, 19 percent above the 1995-96 season, and more than double the value of the 1992-93 crop. The value of Shiitake mushroom sales was 11 percent above the previous year. Agaricus Mushrooms Agaricus mushroom production totaled 777 million pounds, down slightly from the 1995-96 season, and 1 percent below the 1994-95 season. Pennsylvania had 46 percent of the total volume of sales, and second-ranked California contributed 17 percent. The value of the Agaricus crop was estimated at $730 million, compared with $728 million for the 1995-96 season. Brown mushrooms, including Portobello and Crimini mushrooms, were valued at $47.2 million for the 1996-97 crop. The Brown mushroom crop accounted for 32.7 million pounds, or 4 percent, of the total volume of sales. The number of Agaricus growers in the U.S. totaled 165, down 15 from last season and 21 below the 1994-95 season. The growing area reached 37.8 million square feet, 9 percent above the previous year. Yields averaged 5.70 pounds per square foot, and producers received an average return of $5.36 per square foot. U.S. fresh market production was 71 percent of the total, compared with 69 percent last year. The percent processed fell 2 percent to 29 percent for the 1996-97 season. For the 1997-98 crop, most growers plan to keep their total fillings unchanged from the 1996-97 crop or to increase slightly. Specialty Mushrooms The volume of sales for commercially grown specialty mushrooms (Shiitake, Oyster and all other exotics) in 1996-97 increased to 10.5 million pounds, up 19 percent from the 1995-96 season and 27 percent above the 1994-95 season. A specialty grower is defined as having at least 200 natural wood logs in production or some commercial indoor growing area. With the average price per pound received by growers unchanged from last year, at $3.39 per pound, the total value of sales reached $35.5 million. Shiitake mushroom sales totaled 6.48 million pounds for the 1996-97 season, up 14 percent from last year's sales. Despite a drop of 9 cents per pound to $3.40 in the price received by growers, the total value rose to $22.0 million. The value of sales of Oyster mushrooms rose 46 percent in one season to $6.54 million, and the value of exotic mushrooms other than Shiitake or Oyster rose 22 percent to $6.98 million.
