Here is basically a cookbook by Nathan Bryant, doing some Valles Marineris calculations.

Summary:
If the feature can be has a flat top or bottom like a water body then you don't have to do anything special. You should be able to use the Cut/Fill function found in 3D Analyst. Otherwise, you can just calculate the volume using the "raster calculator" after the area has been clipped or extracted out. For a small volcanic feature with a flat bottom (not on a slope) and assuming you have the topo you can do the same.
If the feature you wish to measure is on a sloped surface then you need to estimate a top or bottom surface to subtract the original surface from. For example, let's take a channel. This can be done by digitizing around the channel feature on the rim and cut away the area you wish to calculate the volume of (channel interior). Then using a neighborhood calculation (boxfilter) you can fill in from the surrounding rim. For large holes it is easier to create a TIN (triangulated irregular network) to fill over the large hole and then convert back to a raster. Either way, you now have an approximated top surface to subtract the original DEM from.
