OB:  To develop & apply sensory & quality methods for evaluating horticultural
food crops; gather data on the performance of fruits & vegetables evaluated by
sensory methods that will characterize genotypic differences for quality
factors & provide product quality information for new cultivar introduction;
study post-harvest factors that affect quality, sensory & culinary
characteristics of horticultural food crops. 
AP:  Parameters involved in evaluating quality may be characterized as
appearance, texture, flavor & off-flavor, & odors. The method of evaluating
these parameters may vary according to the product, number of samples,
information available & desired, time, equipment, etc., using an appropriate
experimental design & statistical procedure. Trained panelists will be used to
identify quality & sensory characteristic of horticultural food crops.
Specific score sheets & design presentations will be developed for each food
product being studied. Depending on availability, standard reference samples
will be used at each evaluation; each sample will be replicated 3 times. When
appropriate & available, data from objective measurements will be correlated
with sensory judgements. An analysis of the sensory data will be made, & this
information along with objective measurements will be related to the other
cooperators.

     Of the 24 cultivars (11) and 13 advanced selections of fresh apples that
were evaluated by a trained panel for sensory characteristics, 'Red Haralson',
scored 7.0; 'Regent' and MN #1735, 6.2; and #1733, 6.0. Frozen strawberry
cultivars (5) and advanced selections (11) were evaluated for sensory
characteristics. 'Jewel', 'Blomidon' and MN 118 scored 5.5. 'Honeoye' was used
as a reference and scored 6.0. All samples were scored separately for flavor
intensity as well. A trained sensory panel evaluated 21 advanced selection and
cultivars for french frying. Using a difference-descriptive score sheet 1
(low) 9 (high) MN #13545 scored 7.6 followed by 'Russet Burbank' at 7.4; MN
#13540 and #13451 scored above 7.0. 'Krantz' continues to perform well. All
the potatoes evaluated for french frying had specific gravity above 1.076. And
all scored higher than the commercial product which scored 4.4. Advanced
selections (15) and cultivars from Becker (12) were evaluated as bakers for
color, texture and flavor. MN #12567, #13035, #13545 and 'Norgold' scored 7.0
(1-low)(9-high). 'Nugget', 'KRantz', 'Reddale', MN #13653 and #13451 scored
6.0. MN #12567 scored 7.8 as a boiler. 24 cultivars and advanced selections
were evaluated for baker and boilers from Grand Forks. MN #12966 and #13035
were the top boiling potatoes. 'Jirick, 'R. Burbank', 'Kennebec', Shepody', MN
#10874 and #12823 were all top bakers.
