Overview:   The United States Department of Agriculture's (USDA) Food Safety Inspection Service (FSIS) conducted the one-time Nationwide Sponge Microbiological Baseline Data Collection Program for geese from September 1997 to November 1997. Approximately 100 goose sponge samples were collected from 2 federally inspected slaughter plants. These samples were collected to estimate the prevalence and levels of bacteria of public health concern on goose carcasses. The specific bacteria of interest included Salmonella and generic Escherichia coli. This report pertains to the tested prevalence and levels of generic E. coli.

Disease Information:   Escherichia coli bacterium is a commensal organism that is normally present in the gut flora of food animals, poultry, and humans. A few strains are capable of causing disease, especially in situations of compromised host health. Generic (Biotype 1) Escherichia coli bacteria strains are generally considered nonpathogenic. They are thought to be of value as an indicator of general hygiene and process control in the food safety industry. Generic E. coli is reported as colony forming units (CFUs) per milliliter of carcass rinse fluid analyzed. Generic E. coli can be isolated from more than 95 percent of fecal material from all animals, including humans, and is not typically a foodborne pathogen.
