>> Glycosans and Anhydro Sugars
An anhydro ring is formed if a water molecule is removed from two hydroxyl groups of a monosaccharide. A glycosan is formed if one of those hydroxyls is anomeric, or an anhydro sugar is formed if neither hydroxyl is anomeric. Loss of another water molecule from a further pair opf hydroxyls results in a dianhydro derivative containing three rings. A glycosan is an intramolecular acetal, and an anhydro sugar is an ether; they may be formed from aldoses, ketoses, or alditols in pyran or furan form.
