    Cruise Ship's Corrective Action Statement

Item No.: 15
Site: Galley-Main Galley - Deck 6 - Walk-in Refrigerator #6618
Violation: A 7lb 2 oz can of tomato ketchup had a moderate sized dent along one side of the can. This item was discarded during the inspection.
Recommendation: Ensure that food packages are in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Ensure that canned goods with dents on end or side seams are not used.

Site: Buffet-Pizzeria
Violation: The water for the dipper well was shut off. Two ice cream scoops were noted in the well containing water.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (4) In running water of sufficient velocity to flush particulates to the drain, if used with moist food such as ice cream or mashed potatoes.

Site: Buffet-Horizon Court - Portside Buffet Service Line
Violation: The handle of the knife for the peanut butter was noted in direct contact with the food.
Recommendation: During pauses in food preparation or dispensing, ensure that food preparation and dispensing utensils are stored: (1) In the food with their handles above the top of the food and the container.

Site: Galley-Main Galley - Deck 6 - Sauce Station
Violation: The end cap to the handle of flat-top grill #3 was missing, leaving an opening where food and debris could collect, making cleaning difficult. The ship is awaiting the replacement part.
Recommendation: Replace the missing end cap.

Site: Galley-Main Galley - Deck 6 - Pastry Distribution (FWD)
Violation: Three previously cleaned plastic plate covers were found slightly soiled with specks of food and stored as clean. This item was corrected during the inspection.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Galley-Main Galley - Deck 6 - Potwash Area
Violation: Two previously cleaned pans were found slightly soiled and stored as clean. These items were rewashed during the inspection.

Site: Preparation Room-Preparation Room - Vegetable Preparation
Violation: A sticky, adhesive-like material was found on the surface of one of the vegetable slicer blade units. This item was corrected during the inspection.
Recommendation: Ensure that food-contact surfaces of equipment and utensils are clean to sight and touch.

Site: Galley-Main Galley - Deck 6 - Hot Line
Violation: Two technical compartments beneath the barie maries were found soiled with greater than one day's accumulation of food debris.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The underside of the preparation counter (lip area) was soiled with a sticky material. This item was corrected during the inspection.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Galley-Main Galley - Deck 6 - Sauce Station
Violation: The exterior of the previously cleaned microwave was slightly soiled with a greasy material. This item was corrected during the inspection.
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Site: Galley-Main Galley - Deck 6 - Service Line (Aft)
Violation: The deck beneath the ribbed grill was soiled with food debris. The area had been previously cleaned. This item was corrected during the inspection.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Site: Galley-Main Galley - Deck 6 - Dishwash Area
Violation: A leak was noted at the base of the backflow prevention device on top of the conveyor dishwasher. This item was corrected during the inspection.
Recommendation: Ensure that a plumbing system in a food area is maintained in good repair.
