AB: Shifting demographics, increased poultry consumption and general ignorance concerning food safety measures provide the potential for increased foodborne illness. In order to determine where food safety educational efforts would be most effective and the needed content of the messages, a survey addressing poultry preparation, storage and thawing methods, and sources of food safety education was constructed and distributed in supermarkets in three Texas urban centers. Between 60 and 67% of consumers prepared poultry once or twice per week. A majority of Hispanics (57%), minors (79%) and uneducated (55%) respondents thaw poultry outside of the refrigerator, either on a counter, in a microwave, or in a sink or water. A majority of Caucasians receive food safety information from either magazines (52%) or television (60%), whereas minors receive education mainly from the educational system (57%) or family (71%). Through increased education in these areas, good food safety habits may be increased in those target groups, especially the next generation of consumers.

AB: Velvet flower (Salpiglossis sinuata, Solanaceae) can be used as an excellent demonstration plant for horticultural crop breeding classes. Salpiglossis produces large trumpetlike flowers exhibiting an assortment of corolla colors and pigmentation patterns. The pistil is large (3 to 4 cm or 1.2 to 1.6 inches long) with a sticky stigmatal tip and flowers can be easily emasculated prior to anthesis. The large pollen grains are shed in tetrads which can be separated and placed on the stigmatal surface. It takes eight to nine weeks from seeding to blooming, with a prolific flowering cycle that comes in flushes. Numerous seeds (about 750 per capsule) are obtained in three weeks after self- or cross-pollination. The influences of three genes that control flower color and pigmentation pattern can be conveniently demonstrated with their dominant and recessive alleles. The R gene controls flower color with red (RR or Rr) being dominant over yellow (rr). The D gene controls the density of pigmentation with solid (DD or Dd) color being dominant over dilute (dd) color. Corolla color striping is controlled by the St gene with striped (stst) being recessive to nonstriped (StSt or Stst) pattern. By using diploid lines of genotypes RRDD (red, solid), RRdd (red, dilute), or rrdd (yellow, dilute) and their crosses, students can easily observe a dominant phenotypic expression in the F(1) hybrid and the digenic 9:3:3:1 segregation ratio in the F(2) progeny. Another gene that controls flower opening can also be used to show its influence on cleistogamous (closed, self-pollinated, CC or Cc) versus normal chasmogamous (open-pollinated, cc) corolla development. In addition, the induction and.
use of polyploid (4x) plants in plant breeding can also be demonstrated using this species.

AB: Garden Explorations, a continuing program at the South Carolina Botanical Garden (SCBG), Clemson University, promotes science participation among children, families, undergraduates, and teachers. Integrated by themes of Plants and their Partners, Plants and their Environment, and Web of Life, Garden Explorations programs include Summer Science Camps, Family Science Saturdays, and Family and Community Outreach Programs. In these programs, college students (largely education, horticulture, biology, and recreation majors) have the opportunity to learn about and experience natural science and math in the garden, along with elementary school teachers, parents, and upper-elementary age children. These inquiry-based learning opportunities enhance and expand the education and professional preparation of Clemson University students who participate in the program. By involving students in intensive hands-on, inquiry-oriented life science and math activities during Garden Explorations programs, we seek to increase science literacy in our region.

AB: Soil erosion has both on-farm and off-farm impacts. Reduction of soil depth can impair the land's productivity, and the transport of sediments can degrade streams, lakes, and estuaries. To address this problem, soil conservation policies have existed in the United States for over 60 years. Initially, these policies focused on the on-farm benefits of keeping soil on the land and increasing net farm income. Beginning in the 1980s, however, policy goals increasingly included reductions in off-site impacts of erosion. The Food Security Act of 1985 was the first major legislation explicitly to tie eligibility to receive agricultural program payments to conservation performance. The Federal Agriculture Improvement and Reform Act (FAIR) of 1996 modifies the conservation compliance provisions by providing farmers with greater flexibility in developing and implementing conservation plans. As a consequence of conservation efforts, total soil erosion between 1982 and 1997 was reduced by 42 percent and the erosion rate fell from 8.0 tons per acre per year in 1982 to 5.2 tons per acre per year in 1997. Still, soil erosion is imposing substantial social costs. In 1997 these costs are estimated to have been about $29,700,000,000. To further reduce soil erosion and thereby mitigate its social costs, there are a number of policy options available to induce farmers to adopt conservation practices including education and technical assistance, financial assistance, research and development, land retirement, and regulation and taxes.
