    Cruise Ship's Corrective Action Statement

Item No.: 08
Site: Potable Water-Potable Water Hoses
Violation: The potable water hoses were not marked "Potable Water Only."
Recommendation: Ensure that potable water hoses are labeled for use with the words "potable water only" in letters at least 13mm (0.5 inch) at each connecting end.

Site: Potable Water-Monitoring
Violation: The testing of chlorine for the bunkering and production was being performed; however, the times at which these tests were performed were not documented. Given the layout of the chart on which the information was recorded, there is a chance that the monitoring times may exceed the hourly and four hour sampling requirements.
Recommendation: Ensure that free residual halogen monitoring is performed at least hourly during the bunkering of potable water and performed at least once every 4 hours during the onboard production of potable water.

Site: Medical-Asymptomatic Close Contacts of GI Cases
Violation: There was no record maintained of the follow-up of asymptomatic close contacts of crew members with gastrointestinal illness.
Recommendation: Ensure that medical staff conduct daily verbal interviews with asymptomatic crew until 48 hours after onset of the ill crew members symptoms.

Violation: There was no record maintained of the follow-up of asymptomatic close contacts of crew members with gastrointestinal illness.
Recommendation: Ensure that medical staff conduct verbal interviews with asymptomatic cabin mates or immediate contacts to confirm their condition, advise them of the hygiene and handwashing facts, and instruct them to report immediately to medical if they develop illness symptoms.

Violation: Food items were stored under an open stairwell.
Recommendation: Ensure that food is not stored: (1) In locker rooms; (2) In toilet rooms; (3) In dressing rooms; (4) In garbage rooms; (5) In mechanical rooms; (6) Under sewer lines that are not continuously sleeve welded; (7) Under leaking water lines, including leaking automatic fire sprinkler heads, or under lines on which water has condensed; (8) Under open stairwells; or (9) Under other sources of contamination from nonfood items such as ice blocks, ice carvings and flowers.

Recommendation: Replace or repair the two vegetable choppers.

Violation: The edges of the starboard countertop was damaged and the edging was separating, making the area difficult to clean.

Violation: The edge molding of the preparation counter at the entrance to the service area, as well as adjacent to the handwash station, was separating, leaving exposed adhesive material, and making cleaning difficult.

Violation: Some of the difficult to clean areas around cooking surfaces and exhaust hoods, as well as doors and hinges of ovens were soiled with food debris and/or burned food materials
Recommendation: Ensure that nonfood-contact surfaces of equipment are kept free of an accumulation of dust, dirt, food residue, and other debris.

Violation: The handwash station in the back bar area had no "Wash Hands Often" sign.
Recommendation: Ensure that a sign stating "WASH HANDS OFTEN" in a language that the food employees understand is posted over handwashing sinks.

Violation: The decks, bulkheads and deckheads in food preparation and food storage areas had gaps, open seams, gaps between counters, attached equipment, exposed piping, uneven panels and other difficult to clean features.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.
