    Cruise Ship's Corrective Action Statement

Item No.: 08
Site: Galley-Dish/Glasswash Machines
Violation: Watts series 7 dual check backflow prevention devices were installed on the potable water lines serving the warewash machines just ahead of the booster heaters. The Watts series 7 devices do not have an intermediate atmospheric vent and cannot be monitored for failure.
Recommendation: Install approved backflow prevention devices.

Site: Potable Water-Mineralizers
Violation: The backwash discharge line air gap on each mineralizer was not twice the diameter of the backwash delivery line.
Recommendation: Ensure that air gaps are at least twice the diameter of the delivery fixture opening and a minimum of 3 cm (1 inch).

Site: Potable Water-Cross-Connection Control Program
Violation: The mineralizer backwash discharge line air gaps were not listed in the cross connection control program.
Recommendation: List the mineralizer backwash line air gaps in the cross connection control program.

Site: Swimming Pool-Testing Equipment
Violation: The pool personnel were using new testing devices to measure the free chlorine residual in the swimming pools. When testing the residual, they would use the equipment in the HIGH Range. HIGH Range is only necessary if the free residual is over 2.2 ppm. This was causing inaccurate elevated readings to be recorded. Each pool measured had adequate free residual chlorine levels at the time of inspection.
Recommendation: Ensure that pool personnel performing operation halogenation equipment and the testing of free halogen levels understand and follow the proper procedures for the testing equipment utilized.

Site: Swimming Pool-Pools, Whirlpools & Spas
Violation: The drain covers for the swimming pools and whirlpool/spas showed no indication that they were certified by ASME/ANSI A112.19.8. The ship is in contact with NSF to find a company that can make new covers for there pool and whirlpool/spa systems that will meet these requirements.
Recommendation: Ensure that anti-entrapment drain covers or other drains that prevent entrapment hazards as specified in U.S. Consumer Product Safety Publication 363-009801 (dual drains/channel drains) are provided on swimming pools and whirlpool spas. Ensure that drain covers have either the plumbing/engineering approving organization stamp and flow rate affixed to the cover, or that a letter is maintained aboard the vessel certifying that the cover meets the safety requirements outlined in AMSE/ANSI A112.19.8M or an equivalent standard.

Site: Preparation Room-Handwash Station
Violation: The paper towel dispenser was mounted above the preparation table resulting in potential contamination of any food on the table. the area was in use at the time.
Recommendation: Position paper towel dispensers to prevent the contamination of food and food preparation surfaces.

Site: Galley-Ice/Water Station
Violation: The low profile fasteners below the ice machine water bath were corroded. These were changed at the time of the inspection.
Recommendation: Install fasteners that will not corrode.

Violation: A hammer, wire brush and rags were stored in the technical space, making cleaning difficult.
Recommendation: Remove the items and do not utilize technical spaces for storage.

Violation: The technical space cover was missing, making cleaning difficult.
Recommendation: Replace the microwave oven technical space cover.

Violation: Water was running over the corroded fasteners and dripping into the ice storage bin.
Recommendation: Install non-corroding fasteners.

Site: Preparation Room-Floor Mixer
Violation: The previously cleaned floor mounted mixer's splash guard and mixing bowl were lightly soiled with food debris.
Recommendation: Ensure that food only contacts surfaces of equipment and utensils that are cleaned and sanitized.

Site: Galley-Upright Refrigerators
Violation: The technical spaces in a few of the units were soiled with dust and debris.
Recommendation: Ensure that nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning are constructed of a corrosion-resistant, nonabsorbent, and smooth material.

Violation: Numerous mixing bowls and pans were stored stacked impeding air drying. The items were wet when separated.
Recommendation: After cleaning and sanitizing, ensure that equipment and utensils are air-dried or adequately drained before contact with food.

Violation: The previously cleaned deck below the counter was soiled with food and dust.
Recommendation: Ensure that decks, bulkheads, deckheads, and attached equipment in food preparation, warewashing, pantries, and storage areas, are cleaned as often as necessary.

Violation: Missing and recessed deck grout was noted around the fish station.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Violation: The deck tile grout in front of the rolling refrigerator was recessed/missing.

Violation: There was missing grout at the interior entry door deck.

Violation: The cover to the deckhead technical space was loose, creating a gap and making cleaning difficult.
Recommendation: Ensure that decks, bulkheads, and deckheads in food preparation, warewashing, pantries, and storage areas are constructed and maintained for easy cleaning.

Site: Bar-Trident Bar and Ice Cream Station
Violation: The deck/bulkhead and deck/counter junctures were not coved in these areas, making cleaning difficult.
Recommendation: Ensure that bulkhead and deck junctures are coved (including galleys, pantries, deck/counter junctures at buffets, bars, waiter stations, and dining room work counters).

Violation: Two filth flies were observed in the window.
Recommendation: Ensure that the presence of insects, rodents, and other pests is effectively controlled to minimize their presence in the food storage, preparation, service areas, warewashing, and utensil storage areas aboard a vessel.

Site: Preparation Room-Pest Control Plan
Violation: The pest management plan was last reviewed in September 2004.
Recommendation: Ensure that the vessel's Integrated Pest Management Plan is evaluated for effectiveness every 2 years or whenever there is a significant change in the vessel's structure such as a renovation or operation.
